These two recipes have a very particular flavor, thank to marsala wine and spumante (white sparkling wine) added to the mix. The ingredients are for 8 people.
The first one is a marsala cream.
1 cup of coffee
200gr dark chocolate
300gr double cream
8 egg yolks
150gr sugar
200ml egg flavored marsala wine (Florio would be the main Italian brand)
300ml spumante wine
In a pan, melt the chocolate and the coffee on a very low heat. Mix until it’s all melted and amalgamated, set aside and let it cool. In the meantime, add the yolks and the sugar to a casserole and mix with an electric whip until it has doubled in size. Now transfer to a pan and cook on a very low heat continuously stirring. Add the marsala wine and spumante and mix until starts to get foamy and pale, then finally take off the stove. However, keep on mixing and add the double cream, mixing with a wooden spoon from the bottom upwards.
Take eight individual cups and form a base with the chocolate and fill with the cream.
And the second one is the simplest dessert you can imagine: pears and chocolate.
300gr dark chocolate
4 pears
50gr butter
200gr sugar
Zest of one 1 lemon
500ml sweet white wine
1 small glass marsala
Peel the pears, quarter them, remove the seeds and set aside. In a pan, add the sugar, wine, half glass of water, lemon zest on a medium. When it’s hot add the pears and cook for 15 minutes or until they’re soft but not too mush.
Set them aside to cool and in the meantime melt the chocolate on a low heat wit the butter and marsala wine. Pour each pear on four serving dishes and pour the chocolate on top.
